On our rooftop 'food forest' we have bee hives, which produce honey onsite.

There are two different bee species that we work with. The first are the black stingless bees that you can find all over Bali. They produce very small amounts of a beautiful, acidic dark honey that is almost like instant vinaigrette. The second are the more traditional honey bees. For these bees we have collaborated with a bee specialist, Pak Wayan, to learn how to take care of them, work with them, and – if we are lucky – harvest their honey.

We currently have six hives around our food forest, a landscape which specifically includes flowering plants that are high on their go-to list for nectar.
