Join the Nusantara kitchen staff at the restaurant at 9am for coffee and jajan and to discuss your personal menu.

Learn to make Bumbu Bali, the complex base spice combination used in many local dishes. Each herb or root in this mixture has medicinal properties. Then prepare a range of unusual authentic Indonesian dishes with traditional techniques, such as using a stone grinder and cooking foods in bamboo over coconut husks or charcoal in the outdoor kitchen. Finally, be seated in Nusantara’s comfortable dining room to be served the dishes you have prepared, and more.

The itinerary and menu can be customised to provide an intimate personal experience to make class a perfect memory or special occasion gift. Participants will receive recipes and a jar of Bumbu Bali spice mix to take home.

The Full Adventure

Arrive at 7am at Nusantara to enjoy a welcome coffee and jajan, a traditional Balinese breakfast snack, and to discuss your program and menu. Then hop on the back of a motorcycle and be driven to the vibrant and colourful Payangan Market to select fresh ingredients for the restaurant kitchen.

On the return journey to Ubud, stop and forage for herbs by the wayside or visit a Balinese compound and watch the preparation of Babi Guling, a classic Balinese festival dish of whole roast pig stuffed with herbs and spices.

Back at Nusantara, learn to make Bumbu Bali, the complex base spice combination used in many local dishes. About the chef

Chef Putu was trained at Alila Ubud, where his mother was pastry chef. Chef Putu was also part of the original Locavore team when the restaurant opened three years ago. His passion and dedication for Indonesian cuisine made him a natural choice for the new kitchen. He’s proud to show guests what can be achieved using local ingredients and has a deep interest in Balinese food. He regularly creates new dishes which are sampled by the multi-cultural Indonesian team, and together they fine-tune the elements before each item appears on the menu.
